Stainless Steel Pastry Docking Wheel

Approximate dimensions: 20.5 x 13.3 x 13 cm. Features a robust stainless steel perforating wheel securely mounted on a solid wood handle. The wheel contains multiple fine, sharp spikes arranged in parallel rows for full-width coverage in a single pass. Intended for pre-bake dough treatment to prevent deformation during thermal expansion. Works effectively on chilled shortcrust, rolled puff pastry, yeast-leavened pizza bases and unleavened flatbreads. Designed for intuitive use — position at dough edge and roll steadily toward centre or vice versa, applying gentle downward pressure throughout motion.
